The Job Interview - How Can You Really Know How Someone Will Work?

I have been interviewing for jobs and find the whole interview process a little off kilter. I mean, how can we really know what a company is like when they grill you? And how do they know how productive I will be by answering questions the right way? I say give people more 90 day trials and let them duke it out. An apprentice like approach but that is really the only way to know - for both sides.
